Riced Cauliflower Stuffing With Sausage and Apples

Cauliflower isn’t your grandma’s vegetable anymore. We’re enjoying it in lieu of rice, in our gnocchi, and now instead of bread cubes in Trader Joe’s Riced Cauliflower Stuffing. This inexpensive, frozen product provides the base for a scrumptious, gluten-free stuffing with sausage and apples. And it belongs in your holiday arsenal this year.

TJ’s Riced Cauliflower Stuffing “run, don’t walk to the grocery store” products, as it will likely sell out before Thanksgiving. It’s incredibly herbacious! When you open the bag, you’ll immediately smell fresh sage and see big chunks of herbs. And because the mirepoix is already mixed in, you don’t have chop endless piles of celery, carrots and onions. 

My only complaint: the texture. As with most riced cauliflower dishes, it needs a little something. I solved this problem by adding hearty, sweet Italian sausage and crunchy chopped pecans to mix things up a bit. As a result, it packs all the flavor and satisfaction of the bread stuffing we all grew up on. So your gluten-free guests can enjoy it with abandon, while bread lovers won’t feel like they’re missing out.

Heads Up: Contains Carrageenan

The only thing I don’t like about Trader Joe’s Riced Cauliflower Stuffing is that it contains carrageenan, a common food additive made from red seaweed. While the FDA accepts it as safe, wellness experts worry that it can cause inflammation and irritation in the gut – the opposite of what you’re going for after a heavy holiday meal. Some types of carrageenan have also been linked to certain types of cancer, so it’s not an ingredient I allow into my family’s diet on a daily basis. I’m letting it slide this time because it’s a tiny amount in a product I’ll use a couple times a year (at most) to make my life a heck of a lot easier. But if you have IBS or other health concerns, this might be a deal breaker for you.

Variations

If you do choose to make riced cauliflower stuffing, there are a million ways you can go with it! Try adding pears and chestnuts, almonds and butternut squash, or walnuts and roast pumpkin. Riced Cauliflower Stuffing With Sausage And Apples

Trader Joe's Riced Cauliflower Stuffing gets a flavor upgrade with this quick and easy holiday recipe.

Ingredients

  • 2 bags Trader Joe's Riced Cauliflower Stuffing
  • 1 tbsp ghee
  • 1/2 c onion chopped
  • 1/3 lb Sweet Italian Sausage casings removed

Instructions

  1. Melt the ghee in a large pan and sauté apple and onion until soft, about 10 minutes. Remove to a bowl and set aside.

  2. Brown the sausage, breaking it up into crumbles as it cooks. When completely cooked, remove to a bowl and set aside.

  3. Cook frozen stuffing as directed. Add apples, onions, and sausage after 7 minutes cook time. Stuffing is done when all the liquid has evaporated. Let stand 2 minutes and serve immediately.
